Summer Chef Series: Go-Go Goorocco

Chef Deb Paquette of Etch restaurant collaborated with us to create a Premium Goo Goo with unique flavors and ingredients. Made with spicy dark chocolate chile de árbol ganache, candied ginger caramel, toasted hazelnuts, and mint nougat in dark chocolate.

David & I were worried we wouldn’t get the kind of venue we imagined for our wedding: something modern but classy, with an atmosphere you can only find in Music City. We were ecstatic when we discovered The Bridge Building — an indoor & outdoor space right across the Cumberland River. From our ceremony and reception space, our guests could get an amazing view of the Nashville skyline — complete with the famous “Batman Building” from across the river! After the big celebration, guests were able to walk across the John Seigenthaler Pedestrian Bridge to dance the night away at the Honky Tonks on Lower Broad… and visit the Goo Goo Shop! It was perfect.

On having Goo Goo Clusters as part of the big day:

We didn’t have to look far to find the perfect party favor. David & I live downtown, and Goo Goo Clusters are made right in our neighborhood! With the Clusters we were able to give our out-of-town guests a piece of something that not only represents Nashville, but the home we now share. As for our friends in Tennessee, a lot of them were introduced to something a little different. We didn’t realize a lot of them had never tried the Peanut Butter Goo Goos! They went quick… we had to keep restocking our display! The candy was perfect to share with our loved ones. The sweet, southern treat that’s uniquely Nashville couldn’t have been better for our big day.

Summer Chef Series: Rocky Roadkill

It’s back! In the spring, we collaborated with Chef Dale Levitski of Sinema to create a special Premium Goo Goo that he took with him to the James Beard House in NYC. We couldn’t resist selling a few in the Shop that month, and it was such a HUGE hit that we asked him to participate in our Summer Chef Series so we could bring it back again.

The day has come, and we’ve once again got it in the Shop! Starting today through August 16th, you can purchase the Rocky Roadkill, a pure delight of peanut butter, marshmallow, pretzels, peanuts, and potato chips covered in milk chocolate.

Announcing the Goo Goo Summer Chef Series

We are excited to announce our Goo Goo Summer Chef Series happening July 1 through the end of September at downtown Nashville’s Goo Goo Shop!

The series will feature Premium Goo Goo creations imagined by eight of Nashville’s best chefs as seen above. Each chef is collaborating with Lauren Garcia, the Goo Goo Shop’s Confectionery Kitchen Manager, to create his or her own Premium Goo Goo flavor that will be sold at the Goo Goo Shop in the months leading up to the Music City Food + Wine Festival in September. Flavors will rotate periodically, with two to three chefs being featured each month. New flavors will be announced on our social media channels and here on our website as they are launched.

To wrap up the series, the Goo Goo Shop will showcase all of the chefs’ flavors at our Grand Taste tent table during the Music City Food + Wine Festival on September 19th and 20th, 2015.

 

Gooey Goo Goo Brownie Pretzel Pie

Gooey Goo Goo Brownie Pretzel Pie

Yields 8 servings. Created by Joanna Carter, 4th place at the World Food Championship Super Regional Competition

Ingredients:

3 cups salted pretzels

1/2 cup peanuts

1/2 cup granulated sugar, divided

1 cup salted butter

2 Tbsp salted butter

10 Original Goo Goo Clusters

1 cup light brown sugar, packed

3/4 cup dark cocoa powder

1/2 tsp vanilla extract

2 large eggs

1/2 cup all purpose flour

5 large egg whites, room temp

3 cups marshmallow cream

Directions:

Preheat oven to 350 degrees.

Crust:

In a medium sauce pan, melt 8 tablespoons butter over medium-low heat. Set aside.

In a food processor, combine pretzels, peanuts, and 1/4 cup granulated sugar. Pulse until fine crumbs. Add melted butter and pulse until well combined. Press evenly into bottom and up sides of 9″ pie pan. Set aside.

Brownie:

Chop each Goo Goo Cluster into fourths and set aside.

Melt remaining butter in a medium saucepan over medium-low heat.

Remove from heat and add cocoa powder, brown sugar, 1/4 cup granulated sugar. Whisk until smooth. Add vanilla and stir with wooden spoon. Add 2 eggs, one at a time and stir until combined.

Add flour and stir until well combined and glossy.

Add half the chopped Goo Goo Clusters evenly to bottom of the pie crust. Top with brownie batter. Press remaining Goo Goo pieces evenly over the top.

Bake for 15 minutes.

Marshmallow Meringue:

While pie is baking, with an electric mixer on medium speed, whip together egg whites until soft peaks form. Add marshmallow cream, 1/2 cup at a time, beating until stiff peaks form, about 5-7 minutes.

After 15 minutes of baking, top pie with marshmallow meringue, spreading to all edges to seal. Bake 15 more minutes, rotating halfway through.

Allow to cool for 30 minutes and refrigerate.
