This pecan lover’s pound cake uses Pecan Goo Goos, pecans, and pecan meal for a decadent slice. One of the winning recipes from the 2018 Goo Goo recipe contest at the Tennessee State Fair, this dessert also gets creative with a cocoa and powdered sugar finishing touch.
Goo Goo Pound Cake
Made with Pecan Goo Goo Clusters
Ingredients:
2 sticks butter, softened
3 C all-purpose flour
3 C cane sugar
3 tsp vanilla
3 chopped Pecan Goo Goos
6 eggs
3/4 C whole milk
1/4 C pecan meal
1/4 C chopped pecans
1 tsp baking powder
1 tsp salt
Directions:
In a large bowl, mix butter and sugar until fluffy. Add in one egg at a time, mixing lightly after each egg. Next add in flour, baking powder, and salt to butter and egg mixture. Add in milk slowly, then the vanilla. Lastly mix in chopped Goo Goos, nuts and nut meal. Bake in buttered and floured bundt pan at 325˚F for one hour and 15 minutes. Let cake rest in pan for 15 minutes after baking, turn out of pan to cool. Dust with blend of powdered sugar and cocoa.
